Blackberry Chelsea Buns


  • 250ml whole milk, warmed until tepid
  • 7g dried yeast
  • 50g caster sugar
  • 500g strong white bread flour
  • 10g fine sea salt
  • 100g butter, melted
  • 1 medium free-range egg, lightly beaten

For the filling:

  • 60g butter, 35g of this melted
  • 500g black berries
  • 100g caster sugar
  • 1 zest of lemon
  • To glaze:
  • 25g milk
  • 25g caster sugar
