A tangy salad tantalising for the eyes and the taste buds
Serve with a juicy steak or chicken, or simply as an open toasted sandwich!
200g rocket, or any other salad leaves e.g spinach, romaine etc.
150g crumbled feta cheese
2-3 tbsps walnuts, pine nuts or pecans
1) You can prepare the components of this dish in advance.
2) Make the dressing by whisking together the ingredients and setting aside.
3) When ready to serve, toss together the salad ingredients and drizzle the dressing over.
We’ve made really simple tangy feta and raspberry toasted sandwiches. Just toast your bread and feta, then add chopped raspberries before glazing with balsamic.
