Such a simple summer dessert using only 4 ingredients for a light and refreshing strawberry mousse. This recipe serves 2 people but can very easily be scaled up for bigger numbers.
Ingredients:
- 1 egg white
- 50 ml double cream
- 100g AVA strawberries
- 30g sugar
Method:
Prepare the strawberry puree y placing the strawberries and 15g sugar in a pan. Very gently heat until the strawberries release some of their juices. Now blend into a smooth puree and pass through a sieve and chill for a few minutes.
Now take 2 bowls and electric whisk. First, whisk the double cream to soft peaks. Clean the whisk and now whisk the egg white to stiff peaks. Add the remaining sugar to egg white. Combine both mixtures together and fold in ¾ of the strawberry sauce.
Take 2 glass bowl and drizzle a little of the remaining sauce in the bottom and gently place the mousse on top. Chill in the fridge for at least one hour.
To serve, drizzle the last bit of strawberry sauce on the top and decorate with strawberries.
