Winner of the ASF Berry Cook Off! Rado’s delighful Cheesecake with fresh berries is the perfect weekend dessert.
- 500g Curd Cheese
- 250g unsalted butter
- 1 can condensed milk (400g)
- 1 table spoon vanilla sugar
- 400g Malted Milk biscuits
- 400g Fresh berries – Ava Leyre Strawberries, blueberries and raspberries
- Lemon zest(optional)
Leave butter in room temperature so it will soften. In big bowl put butter, curd cheese, condensed milk, vanilla sugar and the lemon zest. Mix together using a mixer until even consistency. Break the biscuits in small pieces and add to the mixture. Wash all berries, cut the strawberries and add to the rest of the ingredients. Mix all together. Put in dish and leave in the fridge for overnight. Decorate with fresh berries and mint leaves.
